Apparently, the consumption of oily fish like salmon has other benefits for individuals who incorporate it into their diet, since scientific studies have yielded surprising findings about the contributions of this food to human health.

First, we can say that because of its nutritional properties, salmon is very useful in shaping the diet to prevent problems of weakening and thinning of bones (osteoporosis), and two of its components are essential to prevent and combat condition:}

Calcium. Most abundant mineral in bone and whose presence in the body depends on diet and skeletal health. In addition to salmon, this element is found in dairy products and some vegetables like corn, soybeans and tomatoes.

Vitamin D. A substance that promotes the intestinal absorption of calcium. Along with blue fish, other important sources of this nutrient are butter, egg yolk, wheat germ, cocoa, and mushrooms.

On the other hand, a number of research efforts to track the incidence of diabetes (inability to absorb glucose or sugar) in Eskimo populations, where even many people are obese, have found that this disease is rare and apparently the reason for this is the high consumption of omega-3 fatty acid, obtained from whale meat and oily fish.

Also, the results of a study conducted by Dr. Yvonne Denkins, Institute of Biomedical Research at Louisiana State University, U.S., have revealed that, apparently, the consumption of omega-3 not only prevents cardiovascular disease, but also improves the functioning of insulin, a hormone responsible for regulating the amount of sugar in the blood and whose deficiency is responsible for diabetes.

Dr. Denkins and his colleagues had 12 men and women with impaired glucose tolerance (pre-diabetes condition) and overweight, consume fatty acid supplements mentioned, finding that in 70% of participants had at least minimal improvement, and that in 50% of the total sample, the change was remarkable.

The expert stressed that, as the number of participants was small, the results are preliminary and therefore people with diabetes should not replace or suspend the use of drugs to control their disease, but acknowledges that this opens new possibilities for studies to verify this virtue, and others in omega-3 rich foods like salmon.

Finally there is only stress that in any case, the consumption of oily fish food is an alternative that should be part of a balanced diet which includes cereals, fruits, vegetables, meat, eggs and milk, as no food for alone is able to provide the large amount of nutrients required by the human body. Forward and to taste this delicacy.

From a nutritional standpoint, the salmon is grouped with tuna, sardines, herring, eels, tuna, swordfish and trout in the “blue fish”, which are distinguished by their exquisite flavor and because 10% of weight is fat (white fish is only 2%).

Regular consumption of these foods is highly recommended to all people because of their nutritional properties, however, is far preferable for those who are at risk of cardiovascular disease or thrombosis (partial or total blockage of the bloodstream, caused by a clot .) This is not a contradiction, since the predominant type of fat in these fish (unsaturated) is useful in preventing and treating health problems of the circulatory system.

Indeed, salmon contains large amount of omega-3 fatty acid, which acts to reduce levels of bad cholesterol (low density) in blood, and slightly increases good cholesterol (high density), thus reducing the risk of formation of blood clots in the blood, while minimizing the accumulation of fat in artery walls (arteriosclerosis).

No wonder, many studies have highlighted the low rate of cardiovascular disease among Eskimos and other populations with high intake of fatty fish like salmon. Therefore, nutritionists recommend eating this food family at least twice a week, as it is shown that it is able to significantly reduce mortality from heart disease.

Also, salmon contains protein in quantity and quality similar to those found in eggs and red meat, in addition to providing large number of minerals such as iodine, magnesium, phosphorus, selenium, iron and calcium. On the content of vitamins include A, D and B complex, which is concentrated in the areas of animal fat.

To make matters worse, the digestion of oily fish is rapid, due in part to the unsaturated nature of the fats, but also depends on how you cook, when fried, digestion is slower than when cooked to grilled, smoked, baked or steamed. In any case, the various cooking methods do not affect omega-3 fatty acids.

It must be said that people with high levels of uric acid (a substance that facilitates joint movement, but in large amounts can cause pain and gout) should reduce or avoid the consumption of salmon and blue fish in general. Should also indicate that this food may cause allergic reactions, so that should be entered in the infant until the child has more than one year old.

Finally, the smoked salmon has significant levels of sodium, so it is advised that moderate consumption is supervised by a physician, to avoid the risk of hypertension, fluid retention, renal impairment or heart failure.

Salmon are a family of fish native to cold regions of the northern hemisphere that can live in fresh or salt water and the meat is very popular worldwide. In addition to its delicious taste, this food has beneficial properties that make it ideally diets against osteoporosis or high cholesterol. Check it out!

Salmon is known in various regions of the world as the king of fish, because the unique texture and pleasant flavor of the meat makes it ideal dish to be eaten at celebrations and special occasions. Also, more and more food cultures and incorporate that advantage, especially because, in addition obtained through fishing, there have been important specialized farms or farms that have expanded the chance to try this product even in places where until little was scarce.

In fact, these fish that naturally inhabit the colder parts of the northern hemisphere, is in the Atlantic Ocean or the Pacific, as well as rivers and lakes of Ireland, Norway, Greenland, Germany, France, Austria, Scotland, Canada and United States, are also obtained in abundance in sites with closed and controlled environments, established in countries such as Chile and Japan, which allows you to find fresh or frozen, where until recently only be marketed canned or smoked.

In fact, salmon designate the name of common concern to fish up the family Salmonidae, which are characterized by elongated body covered with small rounded scales. Some of the most popular are:

Common or Atlantic (Salmo salar salar).
Locked or freshwater (Salmo salar sebago).
Canadian enclosed or river (Salmo salar ouananiche).
Silver or coho (Oncorhynchus kisutch).
King or chinook (Oncorhynchus tshawytscha).
Cherry (Oncorhynchus masou).
Pink (Oncorhynchus gorbuscha).
Chum (Oncorhynchus keta).
Sockeye (Oncorhynchus nerka).
Or hucho Danube (Hucho Hucho).

Although all members of this group of fish born in freshwater, most species migrate to sea, where they spend much of his life however, they return to their place of origin through epic struggle uphill and upstream to deposit their eggs. Native species of the Pacific (Oncorhynchus) usually die once they have spawned, while the Atlantic (Salmo) may have more than one reproductive cycle. Only members of the group known as landlocked salmon in its different varieties, remains all his life in rivers and lakes.

Versatile dish

Salmon flesh can be prepared in many ways, boiled, broiled or grilled, but they are the Scandinavians, especially Swedes, who have led it to its fullest expression in the dish called gravad lax (known in many Spanish American latitudes as marinated salmon), which is to heal the fish pieces with salt, sugar, pepper and dill, resulting in a truly luxurious dish, especially when accompanied by a sweet mustard sauce.

A well-known way to prepare salmon is smoked for that purpose there are different methods, according to the country of origin (Scotland, Norway, Ireland, Chile, Canada, USA), being the preferred style of Denmark, which gives meat clear pink, moist and creamy consistency and delicate flavor.

Overall, the smoked salmon is to wash the outside fish and then remove viscera and head and then carry out a second cleaning process, thereafter the meat is submerged in a salt solution (brine) to be spice. Finally, the steaks are exposed to smoke from burning herbs (juniper and sage, mainly) and wood (elm, ash, oak), until it acquires its characteristic color and smooth.

It is customary to serve the meat with finely chopped onion, capers, chopped boiled egg and cream cheese spread on toast. Also, canned salmon can also be transported to distant places, where it is used in salads, cakes or puddings.

Finally, note that the salmon and other freshwater fish may contain parasites transmissible to humans, so it should be eaten marinated, cured, smoked or cooked. If you want to eat raw (which is less desirable), the product should be frozen for two days to kill parasites that may contain, or must come from a farm, because there are grown and processed under strict controls sanitary and bacteriological.

The person undergoing this type of analysis only requires comfortable clothing without metal or plastic devices in the areas studied. If you are receiving calcium pills should not take it the day of study, but does not necessarily have fasted, nor give the patient or injecting any substance.

On the other hand, if the person has undergone a radiological study with contrast medium (x-rays that use a substance that makes visible the internal organs) must wait a week to perform densitometry, and it should be noted that this analysis is contraindicated in pregnancy.

Through this test is determining the content of calcium in the areas of greatest medical interest and the same density (number per square centimeter mineral in bone), for which they are used internationally established parameters, such as Score T and Z Score, whose values ??are interpreted by the endocrinologist, who gives the diagnosis of the calcification of the various areas, and if increased risk of fracture or not.

If the T score is very low, it indicates that there is osteoporosis, if it is moderately low, determine the problem as osteopenia or bone deficiency; where Z score, it analyzes and compares the results with the average, but with a group defined by age and sex.

Finally, it is interesting that only 10 to 15% of women at risk of osteoporosis diagnostic test done to prevent their occurrence. We encourage you to think about your health and avoid having to take medication is sometimes prescribed for periods up to five years or, worse, having to undergo surgery for them to put a prosthesis if it suffers fracture hip.

Axial skeleton. This test evaluates the quality of older bones, ie, vertebrae and femur (thigh bone). Since these are the bones that have higher risk of fracture, axial densitometry is the most requested by doctors to people with risk factors for developing osteoporosis. Has the disadvantage that its cost is higher compared with the other two.

Peripheral bone. This study evaluates the peripheral bones, such as the calcaneus (located in the heel) is cheaper and faster, and the measuring instrument, being much smaller than the previous one, can be moved easily, which allows many more tests People at risk for osteoporosis.

Ultrasound bone. Review, generally, a phalanx of a finger. This is further evidence that the two previous economic.

Specialized studies have shown a consistent relationship between bone loss in a skeletal site and what happens elsewhere in the same, which could substantiate that any of the tests described above could be used either to diagnose osteoporosis, but a larger investigations so far carried out (in 9 000 women who live in the U.S.) and published in the prestigious medical journal Lancet, by Dr. SP Cummings, in 1993, showed that the test that best predicted who presented femoral neck fracture was that which was done precisely at the neck of that bone. Therefore, today most physicians consider that the axial bone densitometry test provides more information.

Who are candidates for this test?

- Those who have suffered fractures due to bone fragility.
- Women who are in menopause and not receiving hormone replacement therapy (estrogen).
- People with a family history of osteoporosis, which are thin, tall stature and have the habit of smoking.
- Individuals who are taking medications that promote loss of bone mineral or have illnesses that decrease calcium absorption (such as renal failure or rickets, for example).

Technological advances in the field of medicine have led to the knowledge of more diseases and, consequently, the implementation of specific studies to diagnose conditions. In the case of osteoporosis there is a very effective test: bone densitometry.

Disease of our age, osteoporosis is already part of everyday vocabulary, but it would be worth remembering that this condition is characterized by decreased bone mineral density (calcium and collagen) when there is an imbalance in the cycle of reconstruction of the bones (forms least amount of bone tissue is destroyed).

These circumstances cause the bones to become porous, thin and fragile and therefore susceptible to fracture at the slightest effort. This situation is exacerbated by poor calcium and vitamin D (ensure that mineral absorption), but also involving the lower production of estrogens (female hormones), poor exposure to sunlight and a sedentary lifestyle, ie lack of exercise and movement Overall, among other factors.

Osteoporosis affects 1 in 4 women over 60, and 25% of people who suffer hip fractures die within the next year, also, those who survive this period may never regain their independence. In addition, once a fracture of this type are tripled the chances of a second injury in the next five years.

It is made by bone density tests, determining the density (thickness and texture) of the bones to determine the risk of fractures. This method can measure the amount of bone tissue contained in the body with the help of a device, the result is compared with the levels of bone mass that has a healthy population, information obtained by taking into account age, sex , race, height and weight of the patient.

Conventional radiography can detect fractures, however, only show bone loss when more than 30%.

Prevention

Preventive action should begin from childhood, go through puberty, the reproductive period and reinforced during pregnancy (at this stage the woman’s bones tend to weaken because the baby takes its nutrients) and menopause, which allow structures achieve greater bone strength.

You need to eat foods rich in calcium and vitamin D, sun-bathing and exercising, which can be supported with calcium supplements, multivitamins, supplements and food supplements and fortified products.

Women who are postmenopausal are advised to take calcium supplements with added vitamin D because it allows the mineral is best to set bones.

Treatment

- Be followed balanced diet rich in calcium and vitamin D, which must be supplemented with nutritional supplements.
- When vertebrae break, causing intense pain in the back braces are recommended.
- Do not consume coffee, alcohol or smoking, can be used to deshabituantes of snuff.

- Imbalance between the rate of degradation and bone regeneration.
- Poor or no production of estrogen due to menopause.
- Low intake of calcium and vitamin D from an early age.
- Anomaly in the absorption of nutrients mentioned above.
- Smoking may promote the acceleration of the process.
- Prolonged treatment with cortisone-based medication.
- Heredity.
- Lack of exercise is a risk factor, since this activity stimulates bone formation. In addition, the frequent rest causes the calcium is removed from the body through the urinary tract.
- Women are more affected than men because their amount of bone tissue is 30% lower.
- Snuff consumption, alcohol and caffeine promotes calcium excretion through the urine.

Symptoms

- There are no symptoms in the early stages of the disease because the bone density decrease gradually.
- In advanced stages there is pain in back, hips, wrists and amtebrazos of sudden worsening when standing or walking.
- Chronic pain may occur in the back, in addition, where the vertebrae that form the spine are very weak may rupture spontaneously or following mild stroke.
- The most serious manifestation of osteoporosis is the occurrence of fractures in vertebrae, wrists, hips and shins.
- Reduced height due to curvature of the spine.

Skeletal disease characterized by reduced bone mineral density (calcium and collagen) due to imbalance in the cycle of bone reconstruction (less formed bone tissue is destroyed), which causes bones to become porous , thin and fragile, therefore, susceptible to fracture at the slightest effort or not.

This situation is exacerbated by poor calcium intake (contained in milk, cheese, cream and yogurt) and vitamin D (ensure that mineral absorption, and is found in liver oil, sardines, salmon, tuna, liver, milk and butter ), low estrogen production (hormones that maintain good bones, teeth and hair), poor exposure to sunlight and a sedentary lifestyle (little exercise), among other factors.

Importantly, much like what happens to the skin cells, bone is destroyed and replaced on an ongoing basis to keep the skeleton strong and healthy, however, when the destruction is faster than the regeneration, have osteoporosis. Importantly, over time, women who suffer from this condition can lose up to half of their bone mass.

Although osteoporosis is a disease that primarily affects postmenopausal women, at least 20% of people who suffer are men, and the rate is increasing as they live longer.

Postmenopausal Osteoporosis. It is caused by lack of estrogen, hormones that the body stops producing when you have the last menstruation.

Senile Osteoporosis. Occurs in people older than 70 years and is caused by deficiency of calcium and vitamin D, as well as imbalance between the rate of degradation and bone regeneration. It is twice as common in women than in men.

Secondary osteoporosis. Occurs as a consequence of other diseases such as chronic renal failure and certain hormonal disorders related to thyroid or adrenal glands, and that unbalance the calcium absorption process favoring the softening of the bones, is also associated with the administration of certain drugs, such as those containing cortisone. Less than 5% of people suffer from this type of osteoporosis.

Juvenile idiopathic osteoporosis. It is rare, of unknown cause occurs in children and young adults but have no hormonal disorder or vitamin deficiency.

While adequate calcium intake is important in maintaining bone health, excessive calcium intake can lead to increased bone porosity and fractures. Excess calcium deposits in soft tissues and bones, therefore, leads to development of osteoarthritis and osteoporosis.

According to new research from Harvard University for 12 long years, more dairy products consumed, the greater the rate of bone fracture and brittle bones. In fact, in countries where the consumption of dairy products and, in general, levels of calcium in the diet are low, rates of bone fracture is also lower.

According to Dutch researcher, Klompmakers, excess calcium through dairy products and mineral supplements, the forces of bone building cells known as osteoclasts, to replicate prematurely, causing a rapid and premature aging of the bones. Excess calcium in the bones can lead to plaque buildup. Excess calcium may also be deposited in soft tissues in the bones, and prevent the body removes calcium from the bones, where it is stored until it can be excreted.

In Asia, where calcium intake is relatively low (100-200 mg daily), peak bone mass is reached later in life, and bones remain strong and resistant to fracture later in life. Ultimately bone health can be maintained by changing your lifestyle and taking balanced diet and stay active.

We must not allow ourselves to commit to be convinced that limestone toximolecular swallowing poisons or supplements anyway, to fill the void that the lack of real nutrition and exercise has caused. Therefore, osteoporosis can be prevented by reducing the intake of calcium, especially in countries where osteoporotic fractures are common.
